Cocktail Spotlight: Summerthyme Fling from STK LA
There is nothing better than sipping a yummy cocktail in the midst of summer. Actually, there is: when the cocktail itself even tastes like summer! One of my favorite restaurants, STK LA is now featuring a gorgeous, refreshing libation that's so fitting for the SoCal heat. It's called Summerthyme Fling ($15), but it's not your average seasonal concoction. It's made with Brugal Especial, a smooth and delicate rum. Balancing out the potency of the rum is lemon juice, blueberries, simple syrup, club soda and thyme. I love how this drink is a tantalizing blend between sweet and strong with a hint of bubbles, and since thyme is used there's some added flavor of subtle mint! It's such a pretty peachy-pink color that instantly makes me think of a summery sunset. Not to mention, the name matches perfectly with the dreamy pink hue - it's a flirty take on an unexpected mixture!

Summerthyme Fling Recipe
Brugal especial, blueberries, fresh lemon, thyme
1.5 oz Brugal Especial
.78 oz Lemon Juice
.75 oz Simple Syrup
5 Blueberries
2 sprigs Thyme
Splash Club Soda
Garnish: Thyme Sprig
Directions: Muddle blueberries and thyme. Add Brugal, lemon and simple. Shake and strain over ice in a tall glass. Top with soda. Garnish with a blueberry and thyme sprig.
