I enjoyed a tropical drink on an island in California... Coronado Island that is! While on vacation, I explored an extravagant resort called the Hotel Del Coronado located right on the beach with incredible views of palm trees and the ocean. The drink that I just knew I had to have was the Coconut Express, a cocktail made of rum, coconut water, and pineapple juice and was garnished with a fresh juicy pineapple. It definitely seems that the restaurant did a little play on words with the name of it. Maybe the inspiration was the movie Pineapple Express? :)  I am personally a big fan of pineapple, and it was the perfect, refreshing beverage to have while dining outside by the beach! The ambiance of the resort and the fun flavors of the drink made for a relaxing time.
